Fried Foods Linked to Increased Risk of Anxiety and Depression: A New Study

Fried foods are a beloved indulgence for many, but a new study from Zhejiang University in Hangzhou, China, has found that frequent consumption of these foods, especially fried potatoes, may be linked to an increased risk of anxiety and depression. The study conducted by Anli Wang, Xuzhi Wan, Pan Zhuang, and Yu Zhang, published in the journal PNAS, evaluated a large population over 11.3 years and found that those who consumed fried foods regularly had a 12% higher risk of anxiety and a 7% higher risk of depression than those who did not eat fried foods.

The Role of Acrylamide in the Development of Anxiety and Depression

Acrylamide is a chemical formed during the frying, baking, or roasting of foods at high temperatures, and it is found in high levels in fried potatoes, such as French fries and potato chips. The study suggests that acrylamide may be to blame for the higher risk of anxiety and depression associated with fried food consumption. In a separate paper referenced in the study, the researchers exposed zebrafish to acrylamide and found that long-term exposure had caused the fish to dwell in dark zones within the tank, a common sign of a higher anxiety level in the fish. This suggests that acrylamide may also affect the brain and increase human anxiety levels.

While the study evaluated a large population over a long period, experts caution that the results are preliminary. It is unclear whether fried foods drove mental health issues or whether people experiencing depression or anxiety turned to fried foods. The study did not consider other factors that could have contributed to the development of anxiety and depression, such as family history, stress, or lifestyle choices.
